breakfast at sea.

We’re on another crossing. This time from Florida to the Carribean. We’ve had some fairly rolly conditions so I haven’t been able to get too creative in the galley.
This morning though – smooth sailing, so I whipped up a leaning tower of Hotcakes for the crew.

Banana hotcakes


  • 2 cups self-raising flour
  • 1 tablespoon brown sugar
  • 3 eggs
  • 2 cups skim milk
  • 2-3 small bananas
  • olive oil cooking spray
  1. Sift flour into a bowl. Add brown sugar. Using a fork, whisk egg and milk in a jug. Stir into flour mixture until just combined. Mash banana and stir into flour mixture.
  2. Heat a small, non-stick frying pan over medium heat. Spray lightly with oil. Using 2-3 tablespoons of batter per hotcake, cook hotcakes until bubbles appear on the surface. Turn over and cook for 2 minutes or until golden.

    Extra yum with greek yoghurt, fresh fruit and honey.
