Made these Burgers for the crew the other day and they went down a treat.
I made the buns fresh but you can use any type of bread.

Pork Burgers with Beetroot Relish and Apple Mayo.

For the Mayo.
Combine whole egg mayo with a splash of apple cider vinegar, finely chopped granny smith apples and celery.

For the Beet Relish.
In a saucepan combine half a cup of brown sugar and half a cup of balsamic vinegar. Heat until sugar has dissolved.
Add a can of beetroot (or freshly cooked if available). Simmer until caramelized.

For the Burgers.
Combine pork mince with chopped fresh herbs, finely chopped red onion, bread crumbs, salt/pepper and 1 egg. Mix together and fry on a griddle pan.

On your burger bun, add the mayo, followed by the pork patty, some fresh baby spinach and finally the beetroot relish. yum! xx
