Just arrived in Grenada this morning, awesome to be somewhere new.
At first glance it looks like an island of rainforest….yet to be explored so expect pics soon… Until then, a salad from today.
Prawn, Bacon, Spinach, Fennel & Shallot Salad
Coat prawns in paprika, salt, pepper and olive oil and sautee until pink. Cook bacon until crispy. When cool combine both with baby spinach leaves, tomatoes (cherry if you have them – I didn’t), thinly sliced fennel, shallots, mint and parsley. Coat with a lemony white balsamic and honey dressing)
