marinating olives.

I have a bunch of little projects on in the galley that I am prepping in advance for the next guest trip.

Today I wanted to jazz up some olives to use with mezze platters and the likes. I took a selection of different good quality olives, both green and black that I found at the local markets in Barcelona. I tried to pick ones that weren’t already marinated so that it wouldn’t taint my flavours.

I added some mild chilli peppers, baby pickled onions, lemon juice and rind, thyme and of course a good quality olive oil.

The longer its left the bigger the flavour.

  1. Looks delish! I copy the mudbrick ones by marinating them in rosemary and peeled cloves of garlic. I highly recommend it!!! Love u xoxo
