superballs.

I’ve been practicing all sorts of raw, gluten free recipes this week for our christmas guest trip. Healthy is the operative word and gluten free seems to be the trend with this family, so when I came across this recipe on a friends Women’s Health site, I thought it could be a possible winner.

And a winner it was! No sooner had I finished a batch had they disappeared. Its the perfect ‘go to’ snack when you get the 3pm sweet munchies, and goes cracker with a cup of englands finest!

Lime, goji and coconut balls.

1 ½ cups of almond meal
½ cup of raw cashew nuts (soaked for 1 – 2 hours)
½ cup of sesame seeds
1 ½  cups desiccated coconut
½ cup of coconut oil
½ cup maple syrup
½ cup goji berries
½ cup cranberries
½ cup cacao nibs
zest of 2 limes
juice of 1 lime

Add almond meal, cashews, desiccated coconut, coconut oil, maple syrup, lime juice and zest to the food processor and blend until smooth.

Add gojis, cranberries and cacao nibs to the mix and pulse a few times to combine.

Roll the dough into small balls and then roll in desiccated coconut.

Refrigerate for at least 30 minutes

Store raw balls in the fridge.
