Mahimahi Ceviche with pea puree

Aaaaaaand I’m back!!
Went slightly off the radar after a few busy months in the Carribean. We are back in Europe now after a smooth sail across the pond that took around 2 weeks. I have a bunch of dishes/recipes from the last few guest trips to upload including this Mahimahi Ceviche. Our trusty on-board fisherman (better known to some as the ginger ninja) caught us a beautiful Mahi that I quickly marinated in a lime juice dressing. Super easy to make and when this fresh, so super tender!

Mahimahi Ceviche with pea puree

2 fillets mahi mahi, diced
1/2 cup lime juice
1/2 punnet of cherry tomatoes
2 tablespoons Chopped Cilantro
2 tablespoons chopped cucumber
2 tablespoons Diced Avocado
2 tablespoons diced or slivered red onions
2 tablespoons diced mango
salt and pepper
1 cup green peas
1 cup vegetable stock

Marinate fish in lime juice for at least 1 hour then drain

For the pea puree, warm the peas and stock over a medium heat. Drain most of the liquid and blend with a high powered blender.
Add salt, pepper and mint and blend again until smooth.

Mix all the salad ingredients through the marinated fish.

Season with Salt and Pepper

To plate, place pea puree in a shallow bowl. Top with the ceviche, another squeeze of lime and cracked pepper.
