puffed quinoa and cacao bites.

You know your in the right career when you spend your time off working for fun.

I’ve endulged in all things therapeutic this weekend. Solo time, cooking, reading, bike rides and sleep ins. I’ve been an absolute granny-pants and its been LUSH!

I had some cacao butter leftover from the MK course, so I came up with this mix-mash of a dessert slice.
Puffed quinoa is easy to make and gives a great crunch to the creamyness of the cacao butter. It takes less than 5 minutes to make, and about an hour in the fridge.

This recipe is gluten free, sugar free and dairy free so whilst its pretty damn decadent, its also loaded with nutrients…why wouldnt you?

Puffed quinoa, cranberry and pistachio cacao slice

2 tbs Coconut oil
1/2 cup cacao butter
4 heaped tbs raw cacao powder
5 tbsp maple syrup
1 cup puffed quinoa (heated in a saucepan like popcorn until popped and slightly golden in colour)
1 cup crushed pistachios
3/4 cup cranberrys
1/2 cup goji berries

Heat the first four ingredients in a saucepan until melted. Add the nuts, grains and dried fruit and pour into a lined loaf tin.
Refrigerate for an hour or until firm and slice into desired bite sizes.
Keep refrigerated.
