souping up for winter.

Winter is around the corner, I can feeeeeel it!
Here in Holland the early mornings are drenched in mist and the air has that sharp warning of winter on its way.

In saying that the days are beautiful. The sun is out, people cruise past me in the canals enjoying the last of the summer vibes. The ducks are out, the dutchies have their boats in the water, and my next door neighbour is fishing in his undies.

Me, I’m prepping for a long cold winter with soup everyday. This ones an old favourite, and combines the flavour combinations of savoury & sweet, but remains wholesome and warming.

Roasted Cauliflower, green apple and parsnip soup

1 head of cauliflower florets
2 parsnips, peeled and roughly chopped
1 green apple
3 garlic cloves, peeled chopped
2 tablespoons chopped thyme,
3 tablespoons extra virgin olive oil
2 shallots roughly chopped
1/2 teaspoon cumin
1/2 teaspoon smoked paprika
3 cups vegetable or chicken stock
2 tbs lime juice
salt and pepper to taste

On a baking tray, lay out the first 4 ingredients and drizzle with olive oil. Oven roast until lightly golden.
In a saucepan lightly fry the shallots, add the roast vegetables, and spices and sauté for a bout 3 minutes.
Add the vegetable stock and bring to boil, turn down the heat and simmer for about 10 minutes. Season to taste, and add a squeeze of lime juice to bring up the flavours.
With a hand mixer blend the mixture until smooth, serve with a sprig of time and a drizzle of olive oil, or my favourite – pumpkin seed oil.
