I seem to be creating allot of light and fruity summer themed salads and smoothies over the last few weeks. Which is strange given that we are weeks away from the canals freezing over here.
Perhaps I’m sub-consiously dreaming of my summer in New Zealand which is a mere three weeks away.
I’ll be glad to trade in the ice skates for long lazy beach days on my Island home. This trip can’t come soon enough!
So in preparation for sun sand and sea, I’ve got a winter smoothie with a very summer fruit feel!
I haven’t used persimmons very much in the past but they are in abundance here in Holland, and after a few days sitting in the windowsill they were ripe and ready for use.
They have a beautiful sweet flesh, similar to papaya but with their own unique sweetness. Perfect in a breakfast bowl, smoothie, dessert or simply eaten as is.
Persimmon, Passionfruit and Goji Smoothie
1 1/2 persimmons, peeled and cut into chunks
the pulp of 4 passionfruit, or 1/2 cup passionfruit puree
330mls coconut water
squeeze of lime
1tsp goji powder
1tsp maca powder
pinch himalayan salt
1 cup ice
Blend all ingredients, and serve with passionfruit pulp.
