Check out these hot-pink beauties I found at my grocer last week!

Dragonfruit (or Pitaya), looks like a ‘punk rock’ fruit, but in fact it has a very delicate flavour. So adding a little sweet and sour – as I did with the lime and honey in this sorbet, really helps to boost the natural flavours – handing this fruit his guitar!

This simple recipe could not be more easy. You can literally whip it up in minutes with a high speed blender, and with a little freezing time you have yourself one exotic looking party dessert.

Dragonfruit & lime sorbet
The flesh of 4 dragonfruit – pre-frozen
2 cups of ice
3/4 cup honey or maple syrup
juice of 3 limes

Blend in your Vitamix or high-speed blender until smooth. Place in an ice cream container and freeze for an hour or until ready to serve.

If you keep the outter skin of the dragonfruit you can use as a funky little serving dish for something a little different.
